Couscous and Sun-Dried Tomatoes

Serves: 4
Ingredients
- 1 medium onion, finely chopped
- 4 sun-dried tomatoes, halved and chopped
- 1 -2 tablespoon olive oil
- 1 cup couscous (I prefer the whole wheat couscous)
- 1 1⁄2 cups boiling water
Directions
- Heat oil in pan that has a tight fitting lid.
- Saute onions until they just start to soften.
- Add the tomatoes and continue to saute about 5 minutes more, or until the onions become translucent.
- Pour in boiling water, stir and bring back up to a boil.
- Add couscous and stir.
- Cover and simmer for 10 minutes.
- Fluff with a fork when done.
