Cous Cous Salad

Ingredients
- 1 red onion (chopped)
- low-fat cooking spray
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1⁄2 teaspoon ginger
- 200 g couscous
- 2 tablespoons lemon juice
- 375 ml boiling water
- 150 g dried apricots (chopped)
- 1 sweet red pepper (pointed diced)
- 100 g pistachios (or sunflower seeds roughly chopped)
- 3 tablespoons flat leaf parsley
Directions
- Cook onion in low fat cooking spray until soft, stir in spices and cook for 1 minute. Add the cous cous, stir and remove from heat.
- Add the apricots, pour on boiling water, over and leave to cool.
- Place in a bowl and fluff up with a fork, add lemon juice, pepper nuts and parsley, stir well.
