Courtside Caramel Corn

This is terrific. I air popped a bunch of popcorn for this--you won't be able to stop eating it. 1/4 cup of popcorn makes 2 quarts of popped popcorn--I had to look it up to figure out how much I needed. Serving size is estimated. Recipe courtesy of Taste of Home. Show more

  1. :Place popcorn in a large bowl and set aside. In a large saucepan, combine the brown sugar, butter, corn syrup, and salt.
  2. Bring to a boil over medium heat, stirring constantly. Boil for 5 minutes, stirring occasionally.
  3. Remove from the heat. Stir in vanilla and baking soda and mix well. Pour over popcorn and stir until well coated.
  4. Pour into two greased 13x9 inch baking pans.
  5. Bake, uncovered, at 250 for 45 minutes, stirring every 15 minutes. Cool completely. Store in airtight containers.
