Country Style Beef Stroganoff

Cube steak and a crock pot make this an easier version of the comfort-food classic.

Ingredients

  • 2  lbs  beef cube steaks
  • 1  tablespoon  vegetable oil
  • 1  small onion, quartered and separated
  • 1 (10 ounce) can  cream of mushroom soup
  • 1 (7/8ounce) package  reduced-sodium brown gravy mix (I used McCormick)
  • 1  cup hot water
  • 14 teaspoon white pepper
  • 14 teaspoon salt
  • 1  cup sour cream

Directions

  1. Heat oil in large skillet.
  2. Slice cube steak into 1/2 inch thick strips against the grain.
  3. Brown strips in hot oil in 2 batches.
  4. Turn crockpot on high setting and place onions in a layer on bottom of crockpot.
  5. place browned meat atop onions.
  6. add cream of mushroom soup, gravy mix, and water to skillet and scrape to deglaze pan and heat liquids. Pour over meat in crockpot and cook on high 2-3 hours, until meat is tender.
  7. Serve over egg noodles.
  8. Oops! Stir in sour cream before serving over noodles!
