  1. Preheat oven to 400 degrees.
  2. Melt the butter in a heavy nonstick skillet over medium high heat.
  3. Saute onions for 5 minutes, or until tender.
  4. Transfer the onions and next 3 ingredients to a bowl.
  5. Combine the eggs, milk and nutmeg in another bowl.
  6. Season with salt to taste and stir in onion mixture.
  7. Pour into pie shell and bake 25-35 minutes or until center is set.
