Country Pudding

A recipe I got years ago from the Apple Hill Cookbook and found it was good with other fruit besides apples. It's easy and quick. Show more

Serves: 4-6

Ingredients

  • 1  egg
  • 12 cup sugar
  • 14 cup flour
  • 1 14 teaspoons baking powder
  • 14 teaspoon salt
  • 12 cup  chopped  nuts
  • 12 cup  chopped apple (or canned pumpkin or crushed pineapple or persimmon pulp or other fruit)
  • 1  teaspoon vanilla

Directions

  1. Beat egg and sugar and mix well.
  2. Sift flour, salt and baking powder and add to egg.
  3. Mix well.
  4. Fold in nuts, fruit and vanilla.
  5. Pour into greased 8-inch pan.
  6. Bake at 325°F for 30 minutes.
  7. Cool.
  8. Serve warm or at room temperature with ice cream or whipped cream.
