Country Pepper Vinaigrette Dressing

Ingredients

• 1⁄3 cup apple cider vinegar
• 1⁄3 cup red wine vinegar
• 1⁄3 cup  balsamic vinegar
• 3  tablespoons  fresh orange juice
• 2  tablespoons Dijon mustard
• 1  tablespoon honey
• 2  garlic cloves, finely minced, if desired (about 2 tsp.)
• 1  shallot, finely diced (about 1 tbs.)
• 1⁄2 teaspoon kosher salt (to taste)
• 1⁄4 teaspoon fresh coarse ground black pepper
• 1  pinch celery seed
• 3  tablespoons  extra-virgin olive oil

Directions

1. Whisk or blend all ingredients.
2. Chill until serving time.
