Cottage Muffins

Ingredients
- 1 cup flour, plus
- 2 tablespoons flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1 1⁄3 cups cottage cheese
- 2 beaten eggs
- 2 tablespoons vegetable oil
- 2 teaspoons honey
- 4 tablespoons sugar-free jam
Directions
- Mix dry ingredients.
- In separate bowl mix remaining ingredients (except for jam).
- Stir into dry ingredients just until moist.
- Spoon 1/2 of batter into greased muffin tins.
- Top each with one tsp jam.
- Fill each with remaining batter.
- Bake 400F 15-20 minutes.
