Cottage Cheese Quiche

This recipe has been in our family for so many years, I no longer remember where it came from. It's easy and quick and people seem to really enjoy it. Show more

Serves: 6

Ingredients

  • 1  prepared  unbaked pie shell (store bought, such as Pillsbury)
  • 2  cups cottage cheese (not lowfat)
  • 12 cup  grated cheddar cheese or 12 cup monterey jack cheese
  • 1  small onion, chopped (about 1/2 cup)
  •  salt and pepper, to taste
  • 1 12 ounces  fried onions, crushed or 14 cup  seasoned dry bread crumb
  • 2  eggs

Directions

  1. Bake pie shell at 400 degrees for about 3-5 minutes.
  2. Combine rest of ingredients except fried onions.
  3. Stir to mix.
  4. Place mixture in pie shell and bake at 350 degrees for 30 minutes.
  5. Sprinkle with fried onions (or breadcrumbs).
  6. Return to oven and bake 15 minutes longer.
  7. Remove and let stand for 5 minutes.
