Corny Salmon Cakes

Based on a recipe from C. Joe Murray of Angoon, Alaska, and printed in the August 1980 issue of "Alaska" magazine, this is a nice way to use up leftover salmon! You can substitute other kinds of leftover fish, if you like.

Ingredients

• 1  cup Bisquick baking mix
• 1  tablespoon cornmeal
• 1⁄2 cup milk
• 1  egg
• 1  cup  boned  cooked salmon, in pieces
• 1⁄4 cup  chopped onion
• 1⁄4 teaspoon garlic powder
• 1⁄2 cup corn

Directions

1. Mix together the baking mix, corn meal, milk, and egg, and stir well.
2. Stir in remaining ingredients.
3. Cook as you would pancakes in a hot skillet with oil.
