Corny Salmon Cakes

Based on a recipe from C. Joe Murray of Angoon, Alaska, and printed in the August 1980 issue of "Alaska" magazine, this is a nice way to use up leftover salmon! You can substitute other kinds of leftover fish, if you like. Show more

  1. Mix together the baking mix, corn meal, milk, and egg, and stir well.
  2. Stir in remaining ingredients.
  3. Cook as you would pancakes in a hot skillet with oil.
