Cornwallis Yams

Named after a favorite dish of General Cornwallis during the Revolutionary War. This came from North Carolina Sweet Potato Commission. I have not tried this, just posting for safe keeping. Show more

  1. Boil sweet potatoes until softened. Peel and mash. Season with cinnamon, nutmeg, and butter.
  2. Beat eggs and add to potatoes. Combine with remaining ingredients. Pour into a greased 9x13-inch or 3-quart casserole.
  3. Bake in a 350 oven until light brown, about 1 hour. Top with a sprinkle of coconut.
