Cornmeal Cakes

Found in an Amish cookbook. Haven't tried yet, but they sound yummy!

  1. Beat eggs together in a bowl, then stir in milk and vanilla.
  2. Add remaining ingredients and stir 1 minute until smooth.
  3. Heat griddle over medium heat. Fry cornmeal mixture like pancakes and serve with syrup or preserves.
