Ingredients
- 3 eggs
- 3 cups milk
- 1 teaspoon vanilla
- 2 cups cornmeal
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons butter
- 2 cups flour
- 1⁄2 teaspoon baking powder
Directions
- Beat eggs together in a bowl, then stir in milk and vanilla.
- Add remaining ingredients and stir 1 minute until smooth.
- Heat griddle over medium heat. Fry cornmeal mixture like pancakes and serve with syrup or preserves.
