  1. Cut together flour, shortening and salt until it resembles small peas in a food processor.
  2. Combine the egg, water and vinegar and gradually add to flour mixture.
  3. Pulse just until moistened and a soft dough forms.
  4. Divide into 2 disks.
  5. Wrap and refrigerate until ready to use.
  6. Cut beef sirloin in small cubes.
  7. Peel and cut potatoes into small cubes like the meat.
  8. Chop 1 onion, again similar size.
  9. Roll out one disk of dough and place into pie plate.
  10. Mix beef and veggies in a bowl and place into the pie plate.
  11. Top with 2 T. butter.
  12. Roll second disk of dough and place on top of filling.
  13. Crimp the edges together with fingers or fork.
  14. Cut slits into the top of the dough.
  15. Bake 425 deg. until the edges start to brown. About 15 minutes.
  16. Turn down the temperature to 350 degrees and continue baking for another 45 minute.
  17. Let rest for 10 minutes, cut into serving pieces.
  18. Serve plain or with ketchup.
