Cornish Game Hens stuffed with sweet potatoes

Good with a light salad or a simple green vegetable to compliment.

Ingredients

• 3  rock cornish game hens
• 4  sweet potatoes, cooked,peeled and mashed
• 1⁄2 cup pecans
• 2  eggs, beaten
• 1⁄4 teaspoon  grated ginger
• 1  pinch  freshly grated nutmeg
•  salt

Directions

1. Pat the game hens dry.
2. Mix all other ingredients together to form a stuffing.
3. Fill each bird and place on an oiled roasting rack Bake at 375F for about 1 hour.
4. Split the birds down the middle and serve a half to each guest.
