Cornbread - Zuke Bake

Serves: 6-8
Ingredients
- 2 medium zucchini
- 1⁄2 lb pork sausage (or more, if desired)
- 1⁄4 cup chopped onion
- 1 (8 ounce) package corn muffin mix (I use Jiffy)
- 1⁄2 cup shredded cheddar cheese
Directions
- Coarsely shredd 1/3 cup zucchini, set aside.
- Cut remaining zucchini into 1/4 inch slices.
- Brown sausage, breaking up into crumbles. Remove and set aside.
- Cook zucchini and onion in drippings until onion is translucent.
- In a greased quiche pan, or equivalent pan, arrange cooked zucchini rounds in concentric circles.
- Prepare cornbread mix according to directions, stir in shredded zucchini, cooked sausage and cheese.
- Spread mixture over zucchini rounds in pan.
- Bake 350ºF for 25-30 minutes, Invert onto a serving platter. Serve with hot sauce or pepper flakes, if desired.
