Cornbread - Zuke Bake

Cornbread gussied up! You can use hot sausage if your tastebuds can handle the heat!

Serves: 6-8

Ingredients

  • 2  medium zucchini
  • 12 lb pork sausage (or more, if desired)
  • 14 cup  chopped onion
  • 1 (8 ounce) package  corn muffin mix (I use Jiffy)
  • 12 cup  shredded cheddar cheese

Directions

  1. Coarsely shredd 1/3 cup zucchini, set aside.
  2. Cut remaining zucchini into 1/4 inch slices.
  3. Brown sausage, breaking up into crumbles. Remove and set aside.
  4. Cook zucchini and onion in drippings until onion is translucent.
  5. In a greased quiche pan, or equivalent pan, arrange cooked zucchini rounds in concentric circles.
  6. Prepare cornbread mix according to directions, stir in shredded zucchini, cooked sausage and cheese.
  7. Spread mixture over zucchini rounds in pan.
  8. Bake 350ºF for 25-30 minutes, Invert onto a serving platter. Serve with hot sauce or pepper flakes, if desired.
