Buttery Cornbread Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1⁄3 cup white sugar
- 1 egg
- 1 1⁄4 cups milk
- 50 g vegetable shortening
Directions
- Combine ingredients in a large bowl, then mix using a hand beater (no longer than 1 minute) Pour into 12 large muffin cups.
- Bake for 15-20 minutes at 350 degrees F.
