Ingredients
- 8 tablespoons butter, divided
- 3⁄4 cup all-purpose flour
- 3⁄4 cup yellow cornmeal
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 cup sugar
- 1⁄2 teaspoon kosher salt
- 1 cup buttermilk
- 2 large eggs
Directions
- 1. Preheat oven to 425 degrees.
- 2. Place iron skillet or baking dish in oven while preheating with 3 tablespoons of butter.
- 3. Melt remaining 5 tablespoons of butter in microwave.
- 4. In a bowl, whisk together the flour, cornmeal, sugar, baking soda, baking powder, and salt.
- 5. In another bowl whisk together the buttermilk and eggs.
- 6. Add melted, cooled butter to egg and buttermilk mixture- whisk.
- 7. Stir the liquid mixture into the dry mixture until just combined.
- 8. Pour into hot butter skillet or baking dish (8x8).
- 9. Bake for about 18-22 minutes.
