Corn Salsa Just Like Chipotle's

Yields: 2 cups

Ingredients

  • 12  ounces  frozen sweet corn, defrosted and drained
  • 2  jalapenos, seeded and finely diced (if you enjoy the heat, add some seeds)
  • 13-12 cup red onion, finely diced
  • 34 cup fresh cilantro, chopped
  • 2  limes, juice
  • 12 teaspoon salt
  • 12 teaspoon pepper, freshly ground

Directions

  1. In a large bowl, combine all ingredient and mix well.
  2. Adjust salt and pepper, lime and jalapenos to your desired taste.
