Corn Chowder

Ingredients
- 6 slices bacon, chopped
- 1 cup onion, chopped
- 1⁄2 cup celery, chopped
- 1⁄2 cup green peppers or 1⁄2 cup red pepper, chopped
- 2 large idaho potatoes, peeled and chopped
- 2 cups water
- 2 (15 1/4ounce) cans corn
- 1 (12 ounce) can evaporated milk
- 1 cup water
- salt and pepper
Directions
- Fry chopped bacon on medium high heat, after a few minutes add onion, celery, pepper, and fry for a few more minutes. Transfer ingredients to stock pot turn down to medium low heat.
- Add 2 cups of water and potatoes and let simmer until potatoes are almost cooked through. 15-20 minutes.
- Add evaporated milk, and one more cup of water. You can use the evaporated milk can to add the water with. Simmer for 15-20 more minutes. While simmering salt and pepper to taste.
- Serve and enjoy.
