Corn Bread Taco Bake

Easy taco bake the family enjoys. Could use a little extra spice for flavor.

Serves: 6

Ingredients

  • 1 12 lbs ground beef
  • 1 (1 1/4ounce) package  taco seasoning
  • 12 cup water
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can stewed tomatoes
  • 12 cup green pepper, . (or Black Beans) (optional)
  • 12 cup  grated cheese
  • 1 (8 5/8ounce) package  Jiffy corn muffin mix
  • 14 cup  melted margarine or 14 cup butter

Directions

  1. Brown meat, drain.
  2. Stir in next 4 (or 5) ingredients, bring to a boil.
  3. Pour into 2 qt casserole.
  4. Sprinkle with the cheese, then cover the meat & cheese with the dry muffin mix.
  5. Drizzle with melted butter.
  6. Bake uncovered @ 400 for 20 - 30 minutes.
