Corn Bread Taco Bake

Ingredients
- 1 1⁄2 lbs ground beef
- 1 (1 1/4ounce) package taco seasoning
- 1⁄2 cup water
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can stewed tomatoes
- 1⁄2 cup green pepper, . (or Black Beans) (optional)
- 1⁄2 cup grated cheese
- 1 (8 5/8ounce) package Jiffy corn muffin mix
- 1⁄4 cup melted margarine or 1⁄4 cup butter
Directions
- Brown meat, drain.
- Stir in next 4 (or 5) ingredients, bring to a boil.
- Pour into 2 qt casserole.
- Sprinkle with the cheese, then cover the meat & cheese with the dry muffin mix.
- Drizzle with melted butter.
- Bake uncovered @ 400 for 20 - 30 minutes.
