Corn Bread Ground Beef Casserole

Ingredients

  • 1 -2  lb ground beef (cooked and drained)
  • 1  ounce  taco seasoning
  • 15  ounces  sweet corn
  • 15  ounces black beans
  • 10  ounces rotel
  • 2  cups  shredded cheddar cheese
  • 2 (8 1/2ounce) boxes  Jiffy cornbread mix (prepared but not cooked)
  • 2  eggs (for corn bread mix)
  • 23 cup milk (for corn bread mix)

Directions

  1. Pre-heat oven to 400 degrees.
  2. Brown the ground beef.
  3. mix corn bread mix, eggs, and milk while the ground beef is cooking.
  4. drain ground beef.
  5. return to heat ground beef, taco seasoning, corn, black beans, and Rotel.
  6. Once, beef mixture is heated through, pour into baking dish.
  7. Sprinkle on a layer of shredded cheese.
  8. pour corn bread mixture on top and spread around evenly.
  9. Bake for 20 minutes.
