Coriander Parsley Pesto

Ingredients
- 1 1⁄2 cups fresh coriander, firmly packed
- 1⁄2 cup fresh parsley, firmly packed
- 1⁄2 cup olive oil
- 3 -4 cloves chopped garlic
- 1⁄3 cup pine nuts
- 1 tablespoon lime juice
- salt
- 1⁄2 cup grated parmesan cheese (or more)
Directions
- Put all ingredients in the blender or food-processor.
- Process until fine and well blended, add the Parmesan and blend for a few seconds more.
