Copycat Taco Time Veggie Burrito

Had one of these at an Oregon Taco Time and fell in love! Make vegan substitutes as desired.

• Yields: 1 burrito

Ingredients

• 1  whole wheat tortilla
• 1⁄2 cup  fat-free refried beans
• 1⁄4 cup brown rice
• 2  tablespoons  shredded colby or 2  tablespoons cheddar cheese
• 1⁄2 tablespoon sour cream
• 1⁄4 cup  shredded lettuce
• 1⁄4 cup salsa
• 2  tablespoons roasted sunflower seeds

Directions

1. Warm tortilla.
2. Place ingredients inside, fold and enjoy.
