Copycat - Famous Dave's Cajun Dynamite Dust Recipe

Blackened fish is my favourite Cajun recipes. In Australia we have some mixes available commercially, but it is always better home made.

• Yields: 3 cups

Ingredients

• 1⁄2 cup paprika
• 6  tablespoons kosher salt
• 1⁄4 cup fresh coarse ground black pepper
• 3  tablespoons dried basil
• 3  tablespoons file powder
• 3  tablespoons garlic powder
• 2  tablespoons onion powder
• 2  tablespoons dried oregano
• 2  tablespoons cayenne
• 2  tablespoons white pepper
• 2  tablespoons dried thyme

Directions

1. Mix all ingredients in a bowl.
2. Store in airtight container.
3. Use as rub for blackened dishes.
