Copycat Chicken Gnocchi Soup

Ingredients
- 3 tablespoons butter
- 1 onion, finely diced
- 1 cup carrot, finely chopped (matchstick carrots are perfect)
- 2 -3 celery ribs, finely diced
- 3 tablespoons flour
- 8 -10 cups chicken broth
- 1 teaspoon bouillon (optional)
- 1 rotisserie chicken, meat pulled and chopped
- 1 (6 ounce) bag Baby Spinach, finely chopped
- 1⁄2 teaspoon pepper
- 1 (16 ounce) package mini gnocchi
- 1⁄2-1 cup heavy cream or 1⁄2-1 cup half-and-half
Directions
- Sautee onion, carrot, and celery in butter for 3-5 minutes.
- add flour and whisk and cook for 1 minute.
- add chicken broth (and bullion, if using). Whisk to mix in flour mixture.
- Add chopped chicken. Bring to a boil, reduce heat and simmer for 10 minutes or until veggies are almost soft.
- add spinach and simmer 3 minutes .
- add gnocchi and cook 3-5 minutes until tender.
- Add cream or half and half and turn off the heat.
