- Cook unpeeled potatoes in boiling water. Drain, remove skins and cut into cubes.
- Cut bacon into squares and fry crisp in butter.
- Add potatoes, vinegar and parsley.
- Season with salt and pepper and toss lightly until well mixed and hot.
