Cool Shrimp Salad

Ingredients
- 1 lb shrimp, peeled, deveined and cooked
- 1 cucumber, seeded and diced
- 1 cup sliced radish
- 1 cup frozen corn, thawed
- 4 scallions, chopped
- 1⁄4 cup white wine vinegar
- 1⁄4 cup balsamic vinegar
- 2 teaspoons lime juice (or lemon juice)
- 1 tablespoon sugar
- 2 teaspoons chopped cilantro
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon pepper
Directions
- In a large bowl, combine shrimp, cucumber, radishes, corn and scallions.
- In a seperate small bowl, stir together vinegar, lime juice, sugar, cilantro, salt and pepper. Pour over salad mixture. Gently toss to coat.
