Cool Shrimp Salad

This is a nice, refreshing salad with a light dressing. It is best made several hours or longer before serving. Great for a light summer lunch. I like to use the smaller size shrimp. Show more

  1. In a large bowl, combine shrimp, cucumber, radishes, corn and scallions.
  2. In a seperate small bowl, stir together vinegar, lime juice, sugar, cilantro, salt and pepper. Pour over salad mixture. Gently toss to coat.
