Cool Chicken Pita

Ingredients
- 2 cups honeydew melon, cubed
- 1 cup cucumber, finely chopped
- zucchini, finely chopped
- 1⁄4 cup thinly sliced green onion
- 2 cups cooked chicken, shredded rotisserie chicken
- 1⁄3 cup lime juice
- 2 tablespoons canola oil
- 2 tablespoons water
- 2 tablespoons snipped of fresh mint
- 1 tablespoon sugar
- 1⁄8 teaspoon black pepper
- 6 whole-grain pita bread rounds
Directions
- In a large bowl, todd together the hineydew, cucumber, zucchini, green onions, and chicken.
- For dressing, in a screw top jar, combine lime juice, oil, water, mint, sugar, and pepper. Cover and shake well. Drizzle dressing lightly over the melon mixture. Toss to coat.
- Divide mixture among 6 pitas.
