Convection Oven Baked Potato for One

This is a simple recipe for a succulent baked potato made in the convection oven.

  1. Preheat oven to 375.
  2. Choose a russet potato free of blemishes.
  3. Wash potatoes under running water with a vegetable scrubber brush.
  4. Pat potato dry.
  5. Poke the potato all around with a fork for steam to release.
  6. Spray or rub oil or butter lightly over potato.
  7. Sprinkle salt over the potato.
  8. Place potato directly on convection oven rack.
  9. Bake at 375 degrees for 45 minutes or until done. Turn potato over halfway through baking time.
  10. Remove from oven when baked.
  11. Cut or squish top of potato carefully.
  12. Garnish with butter, yogurt, spices or other condiments.
  13. Idea: reserve skin to make a baked potato skin with cheese later.
