Confetti Salad With Ranch Dressing

This is a nice refreshing salad for summertime from Bon Appetit.

• Serves: 6

Ingredients

• 1  English cucumber, chopped
• 16  ounces  baby peas, thawed
• 2  bunches radishes, chopped
• 1  cup celery, chopped
• 1⁄2 cup red onion, finely chopped
•  ranch salad dressing

Directions

1. Combine all vegetables in large bowl. (Can be prepared 4 hours ahead. Cover and refrigerate.)
2. Toss salad with enough Ranch Dressing to coat. Season to taste with salt and pepper and serve.
