Confetti Potato Salad

Ingredients

• 1 (20 ounce)  Simply Potatoes Diced Potatoes with Onion
• 1 (10 ounce)  frozen peas (thawed)
• 1  red bell pepper (chopped)
• 3⁄4 cup green onion (chopped)
• 8  ounces corn (drained)
• 1⁄2 dried cranberries
• 1⁄2 cup canola oil
• 1⁄3 cup white wine vinegar
• 3  tablespoons sugar
• 1⁄2 teaspoon dried dill weed
• 1⁄4 teaspoon salt
• 1⁄4 teaspoon dry mustard
• 1⁄8 teaspoon pepper

Directions

1. In a large bowl combine potatoes, peas, red bell pepper, onions, corn and cranberries. In a small bowl, whisk dressing ingredients. Drizzle over salad and toss to coat. Refrigerate until serving.
