Company Pot Roast

Ingredients
- 1 (3 1/2lb) boneless chuck roast
- 2 tablespoons vegetable oil
- 1 medium onion
- 1 small carrot
- 1 celery rib
- 2 teaspoons sugar
- 1 (16 ounce) can beef broth
- 1 (16 ounce) can chicken broth
- 2 -3 sprigs thyme
- 1⁄4 cup red wine
- 2 medium garlic cloves
- salt
- pepper
Directions
- Preheat oven to 300 degrees.
- Dry roast and sprinkle with salt and pepper.
- Heat oil in dutch oven.
- Brown roast on all sides, reducing heat if fat begins to smoke; 8 to 10 minutes.
- Transfer roast to plate. Reduce heat.
- Saute vegetables until they begin to brown, 6 to 8 minutes.
- Add garlic and sugar and cook until fragrant, about 30 seconds.
- Add broth, thyme & return roast to pan.
- Bake 3 1/2 to 4 hours, turning every thirty minutes or so.
- Remove roast, skim fat and discard thyme.
- Add wine and reduce to about 1 1/2°C.
- Can add potatoes, carrots or other root vegetables about 45 minutes before finishing.
