Company Pot Roast

Excellent traditional pot roast. This is very similar to the Best Recipe American Classics cookbook, but it does not come from it. Maybe they copied it from me? Show more

  1. Preheat oven to 300 degrees.
  2. Dry roast and sprinkle with salt and pepper.
  3. Heat oil in dutch oven.
  4. Brown roast on all sides, reducing heat if fat begins to smoke; 8 to 10 minutes.
  5. Transfer roast to plate. Reduce heat.
  6. Saute vegetables until they begin to brown, 6 to 8 minutes.
  7. Add garlic and sugar and cook until fragrant, about 30 seconds.
  8. Add broth, thyme & return roast to pan.
  9. Bake 3 1/2 to 4 hours, turning every thirty minutes or so.
  10. Remove roast, skim fat and discard thyme.
  11. Add wine and reduce to about 1 1/2°C.
  12. Can add potatoes, carrots or other root vegetables about 45 minutes before finishing.
