Cold Summer Strawberry Soup

Strawberry Fields Forever!! Strawberries have long been one of my favorite fruits. They are incredibly versatile - you can use them in every course , they make a wonderful chilled soup, are the perfect accompaniment to a spinach salad, complement most fish and can be used in many desserts. As a bonus, they provide an excellent source of vitamin C, fibre, folic acid and potassium. Strawberries are also low in calories, fat free and have been proven to keep teeth white and gums healthy. So enjy fresh strawberries while you can - and freeze what you want for the winter season, always delicious!! Show more

  1. Remove hulls from strawberries; wash berries under cool water. In a blender or food processor, add berries, wine, juice, zest and honey, Blend at pulsing speed until puréed.
  2. Add whipping cream, and stir with a fork. Cover and refrigerate for one hour. Serve garnished with fresh mint.
