Cold Pineapple Cilantro Shooter

Ingredients
- 3 cups water
- 2 cups chopped pineapple
- 1 teaspoon agave syrup
- 1⁄8 teaspoon vanilla
- 1⁄4 cup chopped fresh cilantro
Directions
- in a saucepan over medium heat, bring water, pineapple, agave syrup and vanilla to a boil. Reduce heat and boil gently until liquid is reduce by ¼, 10-12 minutes.
- Add cilantro and transfer to a blender.
- Puree until smooth. Refrigerate until chilled.
