Cold Chicken With Sherry

Ingredients
- 1⁄2 chicken, cooked
- 1 egg yolk
- 5⁄8 cup cream
- 2 tablespoons sherry wine
- lemon peel, finely shredded
Directions
- Cut chicken into bite-sized pieces, discarding the bones and arrange in serving bowl.
- Beat egg yolk with cream and sherry.
- Cook, stirring all the time, over gentle heat until sauce thickens slightly.
- Pour sauce over cold chicken and sprinkle with lemon peel.
- Serve chilled.
