Cold Chicken

Yields: 1 chicken
Ingredients
- 1 whole chicken, about 4 lbs
- enough water, to cover chicken
- 3 tablespoons salt
- 1 piece fresh ginger (thumb size)
- 1 tablespoon chinese flower pepper (purchase in asian market)
- 1⁄2 cup soy sauce
- 2 tablespoons sesame oil
- 1⁄2 teaspoon msg
Directions
- Fill a large kettle 2/3 full of water.
- Add chicken, salt, ginger, chinese flower pepper; bring to boil.
- Cover and simmer for 1 1/2 hours.
- Remove chicken and soak in 4 quarts of cold water for 1 hour.
- Cut into bite-sized pieces and arrange on a platter.
- Mix soy sauce, sesame oil and msg.
- Pour mixture over chicken pieces; serve cold.
