Cold Chicken

A delightful dim sum recipe from the Diana Liu cookbook. This is great for a large party or a banquet. Show more

Serves: 12-16

Yields: 1 chicken

Ingredients

  • 1  whole chicken, about 4 lbs
  •  enough water, to cover chicken
  • 3  tablespoons salt
  • 1  piece fresh ginger (thumb size)
  • 1  tablespoon  chinese flower pepper (purchase in asian market)
  • 12 cup soy sauce
  • 2  tablespoons  sesame oil
  • 12 teaspoon msg

Directions

  1. Fill a large kettle 2/3 full of water.
  2. Add chicken, salt, ginger, chinese flower pepper; bring to boil.
  3. Cover and simmer for 1 1/2 hours.
  4. Remove chicken and soak in 4 quarts of cold water for 1 hour.
  5. Cut into bite-sized pieces and arrange on a platter.
  6. Mix soy sauce, sesame oil and msg.
  7. Pour mixture over chicken pieces; serve cold.
