Coffee Walnut Pie

This pie filling has a wonderful coffee caramel flavor. It is very rich.

Directions

  1. Cream brown sugar and butter until well blended; add sugar and mix well.
  2. Add eggs, one at a time, beating well after each.
  3. Add salt, cream and coffee and mix well.
  4. Cook over boiling water, stirring for 5 minutes.
  5. Remove from water and stir in 1 cup walnuts and vanilla; pour into pastry shell.
  6. Bake at 350ºF for 1 hour.
  7. Scatter broken walnuts on top and bake 5 minutes more.
  8. Cool.
  9. NOTE: Pie will puff during baking and shrink slightly as it cools.
