Codfish Balls

Yields: 1 1/2 inch balls
Ingredients
- 1 1⁄2 cups shredded salt cod fish
- 1 1⁄2 cups hot water
- 2 cups hot mashed potatoes
- 2 tablespoons butter
- 2 tablespoons minced onions
- 1⁄2 teaspoon allspice
- 1⁄2 cup flour
- oil or shortening (for frying)
- tomato sauce
- Coleslaw
Directions
- Soak the codfish in hot water for 3 mins.
- drain and with hands squeeze as dry as possible.
- (codfish will expand when wet, but after squeezing it packs back into about 1 1/2 cups.
- In a bowl mix together the codfish and potatoes, butter, onion, and spice.
- Blend well.
- with hands shape into 1 and 1/2 inch bowls.
- roll balls in flour .
- heat oil or shortening to temp of 375 degrees . Fry for 1-2 mins or until balls are golden brown all over.
- drain on paper towels and serve with tomato sauce and coleslaw.
