Coconut Rice

Ingredients
- 1 cup jasmine rice
- 1 (13 1/2ounce) can coconut milk (about 1 1/2 cups)
- 1⁄8 cup water
- 3⁄4 teaspoon kosher salt
Directions
- In a medium saucepan, bring coconut milk and water to a boil. Stir in the rice and the salt, cover and reduce the heat to low. Simmer (never removing the lid) for 15 minutes, or until all of the liquid is absorbed.
