Coconut Rice

Ingredients
- 1 cup basmati rice
- 3⁄4 cup coconut cream
- 3⁄4 cup water
- 2 -3 whole cloves (optional)
Directions
- Wash the rice a few times. I do this by filling a bowl with rice and water and stirring it around, then drain the water and repeat. Repeat until the water is clear, this removes a lot of the surface starch on the rice and prevents it becoming too sticky.
- Put all the ingredients into a saucepan and bring to a boil. Stir the rice and turn the heat to low. At this point you must put the lid on the saucepan and allow to simmer for 15 minutes.
- After 15 minutes turn the heat off and leave on the hob for a further 10-15 minutes. This allows the rice to finish cooking and also cool a little before serving.
