Coconut-Pineapple Cake

Great light fluffy cake. Great for potluck or any event that you have to transport the cake

Ingredients

  • 1 (18 ounce) package  yellow cake mix
  • 3  eggs (or as called for by your cake mix)
  • 13 cup  oil (or as called for by your cake mix)
  • 1 13 cups water (or as called for by your cake mix)
  • 1 (20 ounce) can crushed pineapple
  • 1  cup sugar
  • 1 (3 1/2ounce) package vanilla pudding mix (not instant)
  • 1  cup  whipping cream, whipped
  • 1  cup  chopped pecans
  •  flaked coconut

Directions

  1. make yellow cake mix according to directions on package.
  2. bake in 9x13 pan.
  3. cook undrained pineapple and sugar until sugar is well dissolved.
  4. cook vanilla pudding mix as directed on package.
  5. after baking cake, poke holes with handle of wooden spook into cake.
  6. pour pineapple mixture over top, then pudding.
  7. put whipped cream on top, sprinkle nuts and coconut.
  8. refrigerate overnight.
  9. Tastes even better two days later!
