Coconut Macaroons

Simple recipe that makes soft drop macaroons

Ingredients

  • 4  egg whites
  • 23 cup sugar
  • 1  teaspoon  almond extract
  • 14 teaspoon salt
  • 14 cup flour, sifted
  • 2 23 cups sweetened flaked coconut
  • 12 cup  finely chopped  almonds
  • 12 cup  finely chopped pecans

Directions

  1. Preheat oven to 325.
  2. Beat egg whites for 1 minute on high speed.
  3. Add sugar and beat 1 minute.
  4. Add almond extract and beat 1 minute.
  5. Add in remaining ingredients and mix well.
  6. Drop by teaspoonful onto a lightly greased cookie sheet.
  7. Bake for 11 minutes or until outside of cookie is golden brown.
