Coconut Layer Pudding

Ingredients
- 6 1⁄4 cups coconut milk
- 1 1⁄2 cups sugar
- 1⁄4 teaspoon salt
- 2 1⁄4 cups rice flour
- 3⁄4 cup cornflour
- 3⁄4 teaspoon red food coloring
Directions
- Pour coconut milk into saucepan; warm over low heat. Add sugar and salt; stir until dissolved. Stir in rice flour and corn flour; mix well. Filter batter through a fine strainer. Divide mixture into 2 equal portions. Add red food coloring to one portion. Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer. Allow 10-15 minutes cooking time per layer. Leave to cool. Cut in diamond shaped pieces.
