Coconut Fish Soup

Ingredients
- 1 1⁄2 quarts fish stock
- 3 jalapenos, diced
- 1 tablespoon ginger, grated
- 4 tablespoons lime juice
- 1 stalk lemongrass
- 1⁄2 lb mushroom, sliced
- 1 lb fresh fish, cut into cubes
- 1 (15 ounce) can coconut milk
- 6 basil leaves, chopped
- 6 sprigs cilantro, chopped
- sea salt or fish sauce
Directions
- Bruise lemongrass stalk with the back of knife. Combine broth, lemongrass, chilies, ginger, lime, mushrooms and simmer for 10 minutes.
- Add fish and continue to simmer until just opaque(only a few minutes).
- Remove from heat and remove lemon grass stalk. Add coconut milk, sea salt or fish sauce to taste. Garnish with basil and cilantro.
