Coconut Cake

This is great for any party or potlock as it is fast to make and easy to take. I make it in the Christmas season but it always works as it is festive but still simple. Show more

Directions

  1. Heat oven at 180°C.
  2. Beat eggwhites and sugar until stiff.
  3. Fold in coconut and nuts.
  4. Bake in round 26cm tray for 25 minutes.
  5. Melt chocolate in bain marie and cover the cake with chocolate.
  6. Decorate with walnut-halfes.
  7. Serve with whipped cream.
