Coconut Breaded Fish

Ingredients

  • 2  lbs  fish (river fish, tilapia, etc.)
  • 12 lb  shredded coconut
  • 12 cup  vegetable oil
  • 1 (14 1/2ounce) box  Ritz crackers or 1 (14 1/2ounce) box  wheat, thins or 1 (14 1/2ounce) box  saltines
  • 1  teaspoon salt
  • 1  teaspoon pepper (red pepper for spice)

Directions

  1. Preheat oven at 400°F In plastic bag place fish and 1/4 cup of oil let sit while grinding down crackers until they are a powder-like consistency, add coconut, salt and pepper. Add dry mix to bag and shake well.
  2. In an oven-safe container, use remaining oil. Scoop out enough of extra dry mix place on bottom, layer of fish, and cover with remaining dry mix. Place in oven for 20-30 minutes, turn half way; cook each side till brown.
  3. Best served with steamed vegetables.
