Coconut Banana Muffins- Dairy Free

These fluffy muffins were originated in Flagstaff, AZ (7,000 ft elevation).

  1. Preheat Oven to 400F.
  2. Put coconut, banana and soy milk into a blender and blend until mushy.
  3. Add the rest of the ingredients to the blender and mix.
  4. Pour the mixture into a pre-greased cupcake pan.
  5. Bake in the oven for about 15 minutes- check after 12 minute.
  6. Remove from oven after 'toothpick check' comes out clean.
  7. Let rest for 10 min or as long as you can resist.
