Coconut Banana Muffins- Dairy Free

Yields: 12 Muffins
Ingredients
- 1 1⁄2 cups shredded coconut
- 1⁄2 cup soymilk
- 3 bananas
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄4 teaspoon salt
- 1 3⁄4 cups flour
- 1 egg
Directions
- Preheat Oven to 400F.
- Put coconut, banana and soy milk into a blender and blend until mushy.
- Add the rest of the ingredients to the blender and mix.
- Pour the mixture into a pre-greased cupcake pan.
- Bake in the oven for about 15 minutes- check after 12 minute.
- Remove from oven after 'toothpick check' comes out clean.
- Let rest for 10 min or as long as you can resist.
