Coconut Almond Granola

This is my version of Almond Macaroon Granola that our local co-op sells in bulk.

Directions

  1. Combine all ingredients in a large bowl and mix thoroughly.
  2. Place on a cookie sheet or baking dish, no more than a half an inch deep. You will probably need to divide it up into two batches.
  3. Bake on the middle rack in a 350 degree oven, for 20-30 minutes, checking and stirring every 5-10 minutes.
  4. Cool slightly in the pan before transferring into a large bowl, stir every 10-15 minutes as it cools. It will get crunchy as it cools.
  5. Store in an airtight container for up to 2 weeks.
  6. 1 serving is 1/2 cup, serve with milk or over yogurt and fruit.
