Ingredients

• 1  quart  peach, pickled
• 3  lemons, zested
• 1⁄2 cup mint, torn into small pieces

Directions

1. Cut the peaches into medium cubes and toss with chopped lemon zest, mint and a small amount of the pickling liquid.
