Cobb Salad

Ingredients
- 2 eggs, boiled
- 4 slices bacon, cooked
- 10 ounces fresh spinach
- 1 small head leaf lettuce
- 1⁄4 cup crumbled blue cheese
- 1 1⁄2 cups cooked chicken, shredded
- 1 avocado, sliced
- 1 tablespoon lemon juice
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄4 cup olive oil
Directions
- Line 4 plates with spinach. Tear lettuce into bite sized pieces and top spinach.
- Arrange blue cheese, chicken, avocado, and bacon on top of greens. Peel and quarter eggs. Place 2 wedges on each plate.
- In a small bowl, combine lemon juice, salt and pepper. Whisk in oil. Pour dressing over salad and serve.
